壽司

「鹿羣」坐落於台北市新生北路,鄰近日本料理店群聚的林森北路一帶,是一間僅有13個吧檯座的風雅小店。開門進入店內的瞬間,整潔清爽的吧檯,沉穩端莊的用餐環境,彷彿讓人一腳踏入隱身在日本大街小巷裡的壽司店。

The Taiwanese owner and head chef, A Han, created the restaurant hoping to remain faithful to traditional Edo-style, or Edomae, sushi, and both the Japanese people living in the area and discerning Taiwanese sushi connoisseurs are frequent visitors here. There are many Japanese customers here who are impressed by A Han’s idea to continually strive to remain faithful to the traditional flavors of Edomae sushi as opposed to typical restaurants that tend to rearrange their sushi in order to fit the tastes of Taiwanese locals.

The seafood used for the sushi there arrives from Japan late at night and is brought in to the restaurant the next afternoon to be prepared and served that day. The restaurant takes advantage of Japan and Taiwan being located so close together in order to provide the freshest Japanese seafood with practically no difference in time from Japan.

The sushi rice is prepared using Koshihikari rice from Hyogo Prefecture. The chef repeatedly researched Japanese rice available for purchase in Taiwan and selected the rice for the restaurant based on softness of feel and good flavor for pairing with sushi. Famous Japanese sake from various locations across Japan is brought in based on the season, and the restaurant is happy to recommend the best sake to fit the cuisine as well as the season. The restaurant gets its name from the wish that “customers might congregate here like a herd of deer.”

該店由台灣人阿翰師傅身兼老闆與主廚,提供具有傳統江戶前壽司的味道,不只居住在當地的日本人愛吃,也吸引對壽司有所講究的台灣饕客經常前往消費。在台灣,日本料理常為迎合當地人味蕾而有所變化,因此有許多日本顧客非常感謝阿翰願意傳承守護江戶前的傳統滋味。

店家用來作為壽司材料的海鮮,則嚴選半夜送達台灣的日本漁獲,於白天購回後當日之內處理完畢,運用日本與台灣之間的地利之便,提供與日本幾乎零時差的新鮮食材。

壽司米的部分,則歷經反覆研究可在台取得的日本越光米,根據米飯捏起來的觸感、柔軟度及美味是否與壽司合拍等標準,最終以日本兵庫越光米拍板定案。除此之外,店內更網羅日本各地根據季節生產的名酒,並因應顧客點餐或季節,推薦適合搭配飲用的品項。店家名稱帶有祈願之意,「希望生意像鹿群一樣接踵而至」。
