Monbei operates nine soba noodle restaurants in China, mainly situated in Shanghai. Monbei’s main selling point is the fine soba noodles made by hand at every step of the way, starting from grinding the buckwheat grain, but they also have a full menu of other dishes as well, including sashimi, grilled items, fried items, and stewed items. The vegetables used in the dishes can also be eaten with the confidence of knowing that they have been grown organically, without the use of chemical fertilizers or pesticides.

“纹兵卫”是以上海为中心在中国开设有9家门店的荞麦面馆。不仅出售用荞麦粒磨制而成的很讲究的手打荞麦面,刺身、煎炸烤料理、水煮菜等单品料理也很丰富。所使用的蔬菜也都是无化学肥料、无农药栽培的安全放心蔬菜。

Owner Dohi is a man of considerable achievement, having started the company from scratch in Shanghai at the age of 61, and he says he still wants to have an active role even when he is 80. After early retirement, he began teaching how to make soba noodles as a hobby, gaining around 600 students in one year. The origins of Monbei can be traced back to Dohi accepting those students’ collective desire for him to open a soba noodle restaurant.

The distinction in Monbei’s soba noodles lies in the fact that they carefully mill the buckwheat flour themselves. The flour is milled using a millstone at a special mill, but once every two months it is necessary to disassemble, polish and reset it, and so craftsmen are called from Japan to carry out this work.

The skilled chefs firmly knead the noodles using the fine quality buckwheat flour carefully ground from the grain using the millstone. In order to serve noodles that are as fresh as possible, noodles are kneaded many times throughout the day. These freshly milled, freshly made noodles that are cooked to order have a wonderful bite to them that far surpasses the level of other noodle restaurants. The original dipping sauce that is packed full of umami also complements the taste of the soba noodles.

The alcoholic beverages served at Monbei are tasted and chosen by owner Dohi’s daughter herself, importing the carefully selected items direct from Japan. The recommended way of drinking the shochu is mixed with the water used to boil the noodles, as it is full of nutrition.

Inside the restaurants, there are photos on displaying buckwheat grain and the noodles being made, so one can appreciate how they are made.

老板土肥总经理是一位61岁时在上海从零开始创业的强人,他曾表示要“干到80岁”。
提前退休后, 他开始自己兴趣之一的做手打荞麦面教给别人, 仅1年时间就招收了600名左右的学生。这些学生们希望他开一家荞麦面馆,他同意了,然后就开了“纹兵卫”。

“纹兵卫”最大的特色要数自家精心手打的荞麦面。在专门的工厂里用石臼来舂荞麦面,所用的石臼每2个月需要进行一次分解打磨“锉齿”作业,这些工作都是从日本请工匠师傅来做的。

将荞麦粒用石臼精心磨成上等的荞麦面粉,再由技术熟练的师傅充分手打。为了尽量做到下锅的面都是现打好的,每天都要打很多次面。客人点单后马上就将现磨现打的荞麦面下锅煮,所以其口感和一般的店有着天壤之别。浓缩了美味的独家自制汤汁也为面条的味道增色不少。

酒则是总经理的女儿亲自品鉴,严选之后从日本进口的。尤其推荐品尝烧酒的时候,加入营养丰富的荞麦面汤。

店内展示着手打荞麦面和荞麦粒的照片,让客人可以了解荞麦面是怎么做出来的。
