Gattenzushi (合点寿司), with eleven restaurants in China, is directly managed by conveyor-belt sushi chain Gattenzushi (がってん寿司), which operates around 100 restaurants throughout Japan. Since every Gattenzushi restaurant always has Japanese-speaking staff on hand as well as menus in Chinese, Japanese, and English with photographs of the various menu items, even foreign customers can order without any problem. Unlike the style of typical conveyor-belt sushi restaurants, the layout of Gattenzushi's restaurants leaves the space above the counters open so that customers can watch the chefs preparing sushi, and they are designed to promote direct communication between the customers and chefs. As the staff is trained extensively to follow president Oshima's goal of making restaurants that have warmth and bring customers joy, the restaurants are always full of energy with the cheerful greetings of the staff.

The ingredients are also of the highest quality, with fresh fish such as tuna, yellowtail, and horse mackerel brought in from regions across Japan such as Nagasaki, Kagoshima, and Ehime. Three or four times a month, there are also popular filleting shows where whole tuna are cut up and processed in front of customers.

All Gattenzushi restaurants have famous Japanese water purifiers installed and use sterilizing electrolyzed water for hand washing and cooking utensils. The rice is a blend of Koshihikari and Sasanishiki. The vinegar was co-developed with a leading Japanese producer over the course of two years. Rice that has been combined and cooked with elements such as water and air and cooled to near body temperature (slightly above 30 degrees) is formed into the perfect shape and size by the expert hands of the chef. As a gourmet conveyor-belt sushi chain where you can enjoy flavors developed by chefs with over 10 years of experience, it is not to be missed.

“合点寿司”是一家回转寿司连锁店,在日本经营了约100家店铺的,同时,在中国拥有11家店铺。中国的“合点寿司”便是其在中国的直营店。每家店铺都有会说日语的工作人员,菜单上写有汉语、日语及英语并且附有图片,即使是外国客人也可安心点单。店内设计也与一般的回转寿司店设计不同,柜台以上的部分为开放式,为的是便于客人可以看到寿司匠人制作寿司的样子,同时也可与厨师进行直接的交流。大岛董事长非常重视将店铺打造成为“有爱的店”、“让客人开心的店”,因此,在他的理念之下,接受了严格培训的工作人员每次都会认真向客人问好致敬,“我明白了”的声音在店内此起彼伏,充满活力。

合点寿司对于食材也是严格要求,从长崎、鹿儿岛及爱媛等日本各地采购本金枪鱼、鰤鱼及竹荚鱼等新鲜鱼类。其中非常有人气的活动就是每个月举办三四次的解体本金枪鱼的表演。

所有店铺都安装有日本有名的净水器,洗手间及厨房器具均使用有高杀菌效果的电解水。使用的大米是越光品种和Sasanishiki品种的混合,醋则是与日本大型制醋厂历经两年共同开发研制而成。根据水及空气等条件煮成的米饭,降至肌肤温度30度以上时由匠人用手决定重量亲手捏制。由拥有着10年以上经验的寿司匠人所制作,美食家所推崇的回转寿司定会令你垂涎三尺。
