COEDO Brewery is located in Kawagoe, Saitama and is the home of the world famous Japanese craft beer COEDO. Kawagoe was historically known as “Edo’s kitchen” and was often called “little Edo (ko-edo),” and this is where the brewery gets its name. COEDO beer was awarded a silver award at the World Beer Cup and is exported to a number of countries, including the USA, Australia, and Europe, but the only foreign taproom for the brewery is located in Hong Kong. The interior of the taproom is decorated with paper lanterns reminiscent of a summer festival, and the walls of the establishment are painted black to resemble the kura warehouses in the Warehouse District of Kawagoe which still exist today.

The beer available in the taproom is imported from the COEDO brewery in Japan and is available on draft. Six varieties of COEDO beer are regularly available and guest beers from other countries make limited-time appearances as well. Customers unfamiliar with Japanese craft beer can order the five-variety tasting set which includes a Kawagoe original beer named Beniaka made with Japanese sweet potatoes from the sweet potato growing region of Kawagoe. Each of COEDO’s beers has a unique story and completely different flavor. The menu includes a popular food pairing section which pairs each beer with grilled skewers that go well with that beer’s flavors.

Sumibiyaki, the taproom’s signature charcoal grilling dish, is cooked on a grilling platform brought in all the way from Kappabashi in Asakusa. The taproom’s chicken is farmed in Kagoshima, and the seasonal menu includes specials such as eel from Aichi and firefly squid from Hyogo. Customers can also enjoy Kawagoe Soba, which is a highly popular local dish from Kawagoe with thick, delightfully chewy noodles.

日本的手工精釀啤酒COEDO啤酒是一家位於埼玉縣川越市的啤酒廠,在世界各地都廣獲好評。川越在過去又被人們稱作小江戶,是江戶的廚房,因此這家酒廠取其發音命名為COEDO。曾在有啤酒世界盃之稱的World Beer Cup中榮獲銀獎,更出口外銷至美國、澳洲和歐洲等外國地區,但在國外就唯獨香港擁有該品牌的精釀啤酒吧 (Taproom)。除了在店內裝飾著營造夏季祭典氣息的燈籠,更在牆壁塗上灰泥黑色基調的油漆,表現出過往日式藏造(一種倉庫建築)的川越氛圍。

當店提供的啤酒一律輸入自日本當地COEDO啤酒廠,並以啤酒專用的水龍頭供應。一般除了提供有6款COEDO啤酒外,來自其他國家的啤酒則會以期間限定的方式,當作貴賓啤酒使用。此外,為了讓不熟悉日本精釀啤酒的人,當店也特別設計有5款啤酒的試飲菜單,其中包括使用川越生產的番薯,獨家釀造而成的愛爾啤酒──Beniaka(紅赤)。其實每種啤酒都有自己的故事,味道也截然不同,建議不妨點份當店最熱門的串燒組合,細細品味每款啤酒獨有的香氣與味道。

招牌炭火燒烤料理使用遠從淺草的合羽橋送來的頂級烤台燒烤製作,食材的部分則選用有鹿兒島產的雞肉,限定供應季節的菜單中還會出現愛知產的鰻魚和兵庫產的螢火魷。特別值得一提的是,在這家酒吧甚至還能吃到在川越當地是大受歡迎的美食,麵條寬粗且口感彈牙的川越蕎麥麵呢。
