Bamboo Sushi is the first place Portland locals think of when they think sushi, even regularly winning the restaurant prize in a local magazine. The restaurant has four locations in Portland and has expanded into Denver as well.

The restaurant is known as the first certified sustainable sushi restaurant in the world and serves up its food with the environment in mind, procuring all of its ingredients from small-scale, local producers who use humane production methods. High quality ingredients that are hard to find in the area, such as yuzu kosho (yuzu citrus paste with chili peppers), yuzu juice, Saikyo Miso (Kyoto-style miso), and Japanese hotate scallops are ordered from environment-friendly producers in Japan. The restaurant also serves up an extensive selection of cocktails, wine, and Japanese sake. Starting in June 2017, Bamboo Sushi has partnered with Shushinkan in Kobe, Japan to create their own original brand of junmai ginjo sake named “Bamboo Sake,” which is available at all of their locations.

Menu items available at Bamboo Sushi include sushi along with small side dishes. The restaurant seeks to respect the refined and delicate flavors of traditional Japanese cuisine while mixing unique Japanese ingredients such as yuzu, miso, shiso, grated daikon, pickled plums, and sashimi with more Western ingredients such as truffles, caviar, huckleberries, and kale for a unique, modern menu. They also have a variety of vegetarian-friendly dishes available. The Daily Specials, created as a form of competition between the chefs of each location using fresh ingredients, are a must-try!

Each location uses sustainable energy sources paired with stylish designs which represent the present mood. The SW location downtown has a large window which connects to the restaurant’s terrace seating for a fun and open atmosphere.
