The owner/chef, Mr. Cheng, who speaks fluent Japanese with a Kansai dialect, worked for a seafood wholesaler when he lived in Japan. He used to go to Kobe City Central Wholesale Market every day for work. Through this job, he developed an eye for identifying high-quality fish. His talent is evident in the taste of sashimi and sushi served at Ebisu. In addition to fresh fish, he also imports rice from Japan. He offers a great selection of Japanese sake and shochu.

While the menu is not extensive, Mr. Cheng incorporates his creativity in various aspects of his daily-changing seasonal menu. He places emphasis on seasonality, and is focused with his selection of ingredients. In addition to having an eye for fish, his cooking skills are superb. His traditional Japanese omelet, which features premium eggs cooked slowly for 45 minutes, is very popular among Chinese patrons. It even gets a seal of approval from Japanese patrons, who claim that “This is the best Japanese omelet in Beijing!”

There are many fans of the sushi made by Mr. Cheng, who displays an artisanal spirit and is highly selective about his ingredients. This small sushi restaurant, located in a place accessible only to “those in the know,” is famous among the foodies in Beijing.

店主程厨师说得一口流利的关西方言,他在日本生活时曾就职于一家鱼类供应公司。那时,程师傅每天去神户市中央海鲜批发市场上班。在那里他练就了鉴别鱼类的好眼力,正是这种能力使得如今海老寿的刺身和寿司有着绝佳美味。海老寿不仅从日本进口鲜鱼,还会进口大米。另外,还备有许多日本的清酒和烧酒。

店内菜品的种类并不繁多,而在每日更换的时令菜肴中却足见程师傅的用心。其不但重视季节感,更是对食材精挑细选。程师傅不但是挑鱼的好手,料理技术也是一流。他使用高级鸡蛋花费45分钟精心制作的传统厚蛋烧在中国食客中极有口碑,甚至连精通美食的日本人也会斩钉截铁地说:“这是全北京最好吃的厚蛋烧!”。

程师傅有着匠人气质,又格外看重食材的味道,他所制作的寿司拥有不少粉丝,而这个隐藏在“只有内行才知道”的地方的小巧寿司店,在北京的美食爱好者中已颇具名气。
